Kathie Hardina's Glorious Morning Muffins Fergus Falls, MN
3 Beaten eggs 1 c. Oil (or substitute applesauce) 1 1/2c. Grated carrots 1 1/2 c. Grated apple 1/2 tsp. Vanilla 2 c. Flour 1 1/4 c. Sugar 2 tsp. Baking soda 1/4 tsp. Salt 2 tsp. Cinnamon 3/4 c. Coconut 1/2 c. Chopped pecans Combine eggs, oil carrots, apple and vanilla. In separate bowl, combine flour, sugar, baking soda, salt, cinnamon, coconut and pecans. Add egg mixture to dry ingredients and stir until all is moistened. Bake in muffin tins 18 to 20 minutes at 375 degrees. Cool muffins. Optional: Top with cream cheese frosting if desired.
Cream cheese frosting 1/4 c. Butter, softened 1 (8 oz) pkg. Cream cheese softened 1 tsp. Vanilla 2 c. Powdered sugar Mix butter, cream cheese and vanilla. Beat until smooth. Add powdered sugar aand stir until nice and creamy. Yummy
