Chicken Cacciatore Chicken Italian Cuisine This week's recipe of the week is a super quick and delicious dish called chicken cacciatore. It's Italian and has a little bit of everything in it- pasta, veggies and chicken. This should serve 6 or 4 really hungry people. I hope you love it. Bon Appetite! What did you think of the recipe? What you need: 4 1/2 cups of water 1 clove garlic, finely chopped 1 medium green pepper cut into 1/2 inch pieces 1 medium onion, chopped 1 cup uncooked orzo ( pasta section of grocery store) 1 can (28 ounces) whole tomatoes, in puree 1 teaspoon dried oregano 1 teaspoon dried basil 1 teaspoon salt 1/2 teaspoon black pepper 1 pound boneless, skinned chicken breasts, cut into 1 inch chunks 1/2 cup pitted black olives, chopped 1/2 cup grated Parmesan cheese What you do: Bring 4 cups water to boiling in large skillet. Add garlic, green pepper, onion, and orzo; cook over medium-high heat, stirring occasionally, for 10 minutes. Drain; return orzo mixture to skillet. Add tomatoes, oregano, basil, salt, pepper, and remaining 1/2 cup of water to skillet, breaking up tomatoes with wooden spoon. Bring to simmering. Add chicken, olives, and 1/4 cup of Parmesan cheese to skillet; cover and simmer, stirring occasionally, over medium heat for 10 minutes or until chicken is no longer pink in center. Serve immediately, sprinkling with remaining Parmesan.
