3-1/3 c. flour (not self-rising) 1 c. sugar 3 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. nutmeg 2 TBLS. shortening 3/4 c. milk
shortening to fry in toppers (powdered sugar, cocoa, sprinkles, glaze)
Heat shortening (3 to 4 inches) to 375 degrees in deep fat fryer or kettle. Mix 1-1/2 c. flour and sugar, baking powder, salt, cinnamon, and nutmeg. Cut in shortening, then milk. Blend 30 seconds on low, scrap bowl constantly. Beat 2 minutes at medium. Stir in remaining flour. Turn onto floured surface, roll around lightly to coat with flour. Roll gently to 3/8 inch thick. Cut with floured doughnut cutter. Slide into fat using wide spatula, a few at a time. Turn as they rise to the surface. Fry 2 to 3 minutes until golden brown on both sides. Remove...be careful not to prick. Drain on paper towels. Coat. If you don't have a doughnut cutter, use two different size glasses (one smaller for the hole). Also, coat thedoughnuts twice if using powdered sugar or cocoa...once when hot and once after they cool.
