Hi Kris,
I put in a search for "Habanero Jelly" and got this site
http://recipes.alastra.com/. Then go to the "PRESERVING" section and there you will find jalapeno, habanero and pepper recipies. I have made the Habanero jelly. I was lazy and didn't strain out the pulp. It looked like jelly glasses of fiery sunlight and is exsquisite on crackers and cream cheese.
You can also hunt around in the other sections for recipes.

I have dried bell peppers in the oven. I sliced them into rings. Trimmed out the white part and seeds. I just
placed them on a rack set over a cookie sheet in the oven. I put a wooden spoon in the door so the light would stay on and let them dry for a day or two. They are good to add to soup or spaghetti sauce.

I would love to see what else you come up with.
