Recipe(tried): Ice Cream cone cupcakes Posted By: Becky in KY Date: August 19th 1998 In Reply to: What to make for 3 yr olds Board: TKL Cooking Club
Here's a recipe I've used - You can substitute any flavor cake mix and I have used chocolate chips. The main thing is filling the cones 2/3 to 3/4 full with batter.
Peanut butter party cones
18.25 or 18.5 oz package yellow cake mix 1 1/2 c peanut butter chips 1/2 c milk 24 FLAT BOTTOM ice cream cones 2 containers ready made frosting (I make my own) decorations for cupcakes, your choice
Prepare cake batter according to package directions. set aside.
Melt peanut butter chips with milk in top of a double boiler over hot but not boiling water, stirring constantly until blended.
Add peanut butter mixture while warm to the cake batter beat on medium speed until blended, about 2 min. fill cones 2/3 to 3/4 full with batter place upright in regular muffin cups or 2 inches apart on cookie sheet bake 350 for 30 to 35 min or until cake tester comes out clean. Cool completely. Frost, decorate
If you have to transport, the best way I have found is to use a 'shirt' type gift box, cut circles or X's in the top and insert the cones. Or you can put a large piece of posterboard over a cake pan and cut the circles. It just helps to have something to hold them up if you have to take them someplace.
