Our families have used this for years - it's wonderful and freezes well.
Pepper Steak
1 1/2 lbs Round Steak cut into thin strips 1 clove garlic (or more) 1 cup chopped onion 1/2 tsp salt 1/4 tsp pepper 1/4 tsp ginger 1 tsp sugar 1/4 cup soy sauce 1 lb. tomatoes 1 large green pepper cut into thin strips 1 tbsp cornstarch 1/2 cup cold water
Brown steak in slow cooking pot on stove over med. heat. Transfer to crockpot.
In a small bowl, combine garlic, onion, salt, pepper, ginger, sugar, soy sauce. Pour over steak. Cover and cook slow at low heat for 8 hrs or fast at high heat at 5 hrs.
Add green pepper, tomatoes and stir until blended. Slow cook one more hour. Combine cornstarch & water. Gradually add to pepper steak stirring until thickened. If it doesn't thicken add 1 can tomato paste.
Serve over rice.
