Hi Dorothy, Here's a recipe that I haven't tried. It makes a big batch but should work as well if you divide it down to one loaf. Zucchini-Grape Nuts Bread From: Cookbook USA Makes 4 loaves Mix together: 9 eggs 6 cups sugar 3 cups oil 3/4 cup water 2 tbsp. vanilla Stir in just until combined: 9 cups flour, some whole wheat 1 cup oatmeal, uncooked 1 cup grape nuts cereal 2 tbsp. cinnamon 1 tbsp. ginger 1 tbsp. cardamom (optional) 1 tbsp. salt 1 tbsp. baking soda 3/4 tbsp. baking powder Stir in: 9 cups shredded zucchini (unpeeled) 2 cups raisins 1 cup mixed, candied fruit; optional 1 cup chopped nuts, pecan or walnut Divide equally into 4 greased and floured loaf pans. Bake at 350 degrees for 1 hour, 325 degrees if glass loaf pan. Cool 1 hour, remove from pans. These freeze very well. Happy Baking, Betsy recipelink.com
