CAKE DOUGHNUTS

3 eggs
1 1/4 c. sugar
1 c. buttermilk
1 1/2 Tbsp. melted butter
4 c. all-purpose flour
1 tsp. soda
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
(optional)

Beat eggs in large bowl; add sugar, milk and butter.
Sift dry ingredients together and add to liquid mixture. Mix
well. Cover bowl and chill an hour or so or overnight for
easier handling. Roll dough to 1/4-inch thickness and cut with
a doughnut cutter. Fry in deep fat heated to 375 degrees. Brown on
one side; turn and brown on other side. Yield: about 4 dozen
doughnuts.
