Hi Sharon,
I bring different leftovers for my lunches. I like to bring leftover pasta items, such as spaghetti and meat sauce or lasagna, stir-fries, and if I am feeling really ambitious, I bring stuff to make soft-shell tacos. A little container of the leftover meat or bean filling, a small container of salsa, and a separate ziploc bag with the tortillias. Once I brought some chicken that had been poached in a tomatillo-smoked jalepeno salsa, wrapped in a flour tortilla. My coworkers thought I was crazy going through all of that just for lunch! But hey, it is much better than those frozen Lean Cuisine entrees!
Just some ideas! Good luch breaking away from the sandwich trend!
