Hi Leah, I thought this sounded interesting and did a little searching. I found 2 recipes in my Bread volumne of Time Life, The good Cook Series. I am posting both because one is a batter that is cooked in a dry skillet like a pancake, and the other is fried in a skillet, in fat. Both use yeast, but if you want one with out yeast, do a search on the internet for Yemenite flatbread, and I think you will find some. Hopefully, you can use one of these.
