WHITE FRUIT CAKE
1/2/cups canned pineapple tidbits 2/3 cup choopped citron 2/3 cup shredded lemon peel 1/2 cup chopped candid cherries 3/4 cup chopped dates 2/3 cup shredded orange peel 1 cup chopped dried apricots 1/2 cup chopped figs]1 1/2 cup shite raisins 1/2 cup shredded cocoanut 2 cups chopped walnlluts 1/2 cup flour 1 cup shortening 1 cup sugar 5 eggs 1 1/2 cup sifted all purpose flour 1 tsp salt 1 1/2 tsp baking powder 1/4 cup pineapple juice **Water in cooker with rack
Drain pineapple, saving juice.
Dredge fruits and muts with 1/2 cup flour.
Cream shortening and sugar. Add eggs, one at a timem, beating mixture well after each addition.
Sift flour, salt and baking powder. Add alternatelly with pineapple juice. Pour over floured fruit and nuts: mix until well blended.
Line 2 greased loaf pans with wax paper or 5 No 2 tin cans. Pour batter in pans and cover with wax paper; tie securely.
Place on rack with water in cooker. Steam 20 minutes with pressure gauge off, then put on pressure gauge and cook 60 mins at 10 pounds pressure. Let pressure go down on its own.
**This recipe is from cookbook that came with 12 qt cooker. You may have to adjust to fit in your cooker.You need 2 quarts of water in the 12 qt cooker. Check what your book suggests when baking.I'd think you will need 4-5 cups water in a 4 quart cooker.
