ALMOND FRIED CHICKEN1 frying chicken -- cut up 1 cup flour 2 teaspoon salt 1/4 teaspoon pepper 2 teaspoons paprika 2 eggs -- slightly beaten 2 Tablespoons milk 11/2 cups almonds -- chopped 2 Tablespoons butter or oleo 2 Tablespoons shortening
Preheat oven to 400ºF.
Combine flour, salt, pepper and paprika in paper bag. Toss chicken in mixture. Dip chicken one piece at a time in eggs mixed with milk. Roll in almonds. Let stand for 5 minutes. Melt butter and shortening in shallow baking dish in oven. Place coated chicken skin side down in dish. Bake for 30 minutes. Turn chicken over and bake 30 minutes more. Serves 6.
