4 large sweet potatoes, well scrubbed, unpeeled Parboil sweet potatoes until they give just little when squeezed. Cool slightly and peel, cut into desired sizes for fries.
Deep fry in Hot Crisco oil 350* until slightly browned. Sprinkle hot fries with salt and pepper. These can also be sliced very thin into chips!! Cook the same way.
