There is NOTHING like a good hot chicken soup to warm the chill out of you aching body!!!
In a large soup pot add the following:
1 whole chicken, rinsed well in cold water 1 onion, quartered 2 large scrubbed carrots, whole 1 rib celery, whole 2 cloves garlic, peeled and left whole 1 teasp. lemon-pepper 1 teasp. salt 4 tabsp. minced parsley 2 green onions, root removed, left whole 1 tomato, quartered 1 bay leafAdd enough cold water to cover the chicken by about 4 inches. Bring to a boil and add 2 heaping tablespoons chicken soup base. Simmer at a medium setting until chicken is tender and falling off the bone.
Check the broth for seasoning; add salt & pepper if necessary. Strain the soup. Carrots and celery may be sliced and returned to broth if desired. Remove chicken from the bones and tear into small chunks. Return to the broth. Cook over med. heat and add either cooked rice or tiny pasta and cook until done.
