Maple Walnut Vinaigrette
1/2 cup walnuts, chopped 1 Tablespoon celery leaves, chopped 1 teaspoon garlic, minced 1 Tablespoon shallots, minced 1/4 cup maple syrup 1/4 cup sherry vinegar 1/2 cup cider vinegar 1/4 cup walnut oil 1-1/2 cups salad oil salt and pepper to taste
Combine all ingredients and mix well.
Maple Vinaigrette
1 small onion 1/2 c. sugar 1 tsp. dry mustard 1 tsp. paprika 1 1/4 tsp. salt 1 Tbsp. lemon juice 1/3 c. vinegar 1 c. salad oil 1 tsp. celery seed 1/3 c. maple syrup (or honey)
Combine all ingredients except oil and vinegar in food processor; add half of oil and process for 35 seconds. Add vinegar; process again. Finally add remaining oil and process until smooth. Makes 2 bottles of dressing. Keep in refrigerator.
