Fred - unfortunately lack of appetite is a side effect of cancer. My mom went through this as well. There are many web sites that will give some guidance, try the Cancer Society, Mayo Clinic and sites like that. I also really recommend that your Mom's doctor get you a nutrional consultant.
Now, my Mom had trouble swallowing so much of what we did was centered around that, but here are some ideas. basically, evry thing that enters her mouth should have calories: - use Boost or Ensure, Carnation Instant Breakfast - Add skim milk powder to anything you can. It's almost pure protein. - If you need, look for the meal replacements with added fibre. Constipation is a real danger, and can become very severe. - use big plates, so portions look small. - Figure out the "best" meal, when she eats most, and try and load as much as you can in there. - don't worry about "good nutrition", get calories in! THIS IS REALLY HARD TO DO ON YOUR OWN, GET PROFESSIONAL HELP!
Good luck
