Here's what we had for supper tonight. It is a favorite and quick and easy!
Saute chicken breast in garlic and a little oil or butter, until white and no pink in the centre, on low heat.
In the meantime, slice and dice up your favorite veggies, we used carrots, celery, green onion, green peper, brocoli and mushrooms (I also like zucchini in it too!).
This is also a good time to put pasta to boil. I like this meal with a long pasta like fettucine or spaghetti.
Add the veggies to the chicken. I always add the ones that take longer too cook first like carrots and then add the mushrooms and veggies that take less time to cook last.
When the veggies are about done, add whipping cream to the mix, add the pasta and mix it all up until the sauce is warm. The cream will thicken a bit on it's own. You can use lower fat creams, half & half etc, but I like whipping cream. I figure we don't eat it often so it's not a big deal!
I serve this with garlic bread!
