Here's one I've been using for years:
1 can (14-16 oz) whole kernel corn, drained 1 egg 1 tbsp. flour 1 tsp. baking powder 2-3 tbsp. butter or margarine 2-3 tbsp. cooking oil
Mix first four ingredients together. Heat 2 tbsp. each of the butter and oil in a heavy frying pan (I like cast iron.) Drop mixture by tablespoons into pan, fry in batches on medium high heat for about 2 minutes on each side, or until lightly browned. Add more butter and oil as needed. NOTE: It's a good idea to use a splatter screen over the pan as the corn tends to "pop" while frying.
