Hi Eleanor, Here's a recipe for you that I posted back in '97. I hope it's what you remember. I haven't made this, but two cups of carrots seems like a lot to me - I think I'd cut it back to one cup. Betsy/TKL (9:44:15 pm) : Title: Minute Rice Tuna Casserole Yield: 6 servings 1 can cream of celery soup 1 1/3 cup Minute rice 2 cans (7 oz) tuna, drained, flaked 2 cups carrots, diced, cooked 2 1/2 tablespoons grated onion 1/2 tablespoon parsley flakes Combine rice, soup, vegetables, seasonings, meat and salt and pepper to taste in 2 quart casserole. Stir in 1 1/2 cups boiling water. Cover and bake at 400F for 15 min.
