Sally, The yeast I use is Fleischmann's Active dry Yeast. I have used bulk granular yeast from a co-op. Both work the same. This is my grandmothers recipe which I adapted to bread machine. Babci(gram) was born in late 1800's in Poland. My Mom 85 yrs. old cannot tell the difference in taste or texture.
