Speaking from experience, Filipinos do not eat a lot of bread. Their starch staple is plain, boiled rice (just like most other Asians). I suspect that American tourists are served bread because their Filipino hosts are just trying to offer something familiar.
Some other items that are often found on the menu when large numbers of Americans are expected to attend: pancit, lumpia, barbeque chicken and beef, and lechon. You should be able to find recipes at the links above. The chicken adobo recipe posted earlier is also popular with Americans; try it with 1/2-inch pork cubes, too.
One note of caution: skip the dinuguan unless you expect to serve lots of Filipinos or well-seasoned travelers. Again speaking from experience, most Americans find dinuguan too "weird." It'd be a shame to spend lots of money and effort on a dish that no one will touch.
