White chocolate pieces melt much better and dont add anything to it. they sell white mint chocolate pieces that are pretty good. I have always used food coloring to change the color but you have to keep mixing it to keep it smooth. also the butter spray sometimes makes the chocolate greasy so that ive never done i just pour it in the mold the way it is. I'm not sure how your melting it but if you havent tried before a crock pot works the best ( On Low ) I make chocolate molds quite often. If you have a mold that requires different colors, for example, a rose, use a small paintbrush to paint the leaves green, let cool then you can pour the white chocolate right over the green. (you need to coat pretty thick with the paint brush but it looks really nice when there finished. GOOD LUCK
