On the kabobs themselves I usually add whole mushrooms, onions (sometimes red is nice for color), green, red, or yellow peppers. With chicken, I also sometimes add pineapple chunks for a caribbean type kabob that has great flavor. Serve it with rice as a rule as it goes so well with them. If you want something else, add bread and/or salad as there's plenty of veggies on the kabobs themselves. Also, I like to marinate them for even better flavor (teriyaki, sweet & sour, even buffalo sauce for shrimp and chicken is quite yummy)!
