After attending the Sunday Breakfast Buffet at Mohegan Sun this week-end I have been searching for
a recipe for Cheese Blintzes. I had never had one before this buffet and it was a fabulous treat. I have done some web searching but as yet have found nothing that sounds like this treat. It was similiar in shape to an egg roll. It was golden brown and had a great filling of what could have been a combination of ricotta cheese and possibly cottage cheese. It was on the slightly sweet side in a light and fluffy shell. That is about the best I can describe it.
Hope someone out there has a recipe as I would love to try making some!
