This was my Mom's rhubarb pie recipe. I hope you enjoy it. 1 l/2 C. flour 1/2 C. Crisco 1 tsp salt 3 to 4 TBSP Cold Water 3 to 4 C. rhubarb cut into 1" pieces 1 C. sugar 3 TBSP flour 1/8 tsp. cinnamon
To make crust: mix flour and Crisco until it forms crumbs. Add salt and water. Roll into a ball keeping some for the top crust. Roll the bottom crust out and put it in a 9" pie pan. Filling: mix together sugar, flour and cinnamon. Mix in rhubarb and pour the mixture into pie crust: Roll out the top crust and add to top of pie. Crimp the edges together, brush with a little milk and sprinkle with sugar. Bake l0 min at 450 degrees. Reduce heat to 350 for 20 -30 min until crust is brown and filling bubbles.
