Salami Salad
7 oz. uncooked small pasta shells or other pasta (I use the multicolored spiral) 1 c. halved cherry tomatoes 1 c. halved ripe olives 6 oz. mozzarella, thin strips 4 oz. salami, thin strips 1/2 c. each: chopped red, green, and yellow bell peppers 1/2 red onion, fine diced 4 greens onions, trimmed, sliced Italian dressing to taste
Cook pasta to al dente. Drain and chill (I don't rinse in cold water, it seems sticky that way). Toss with next 4 ingredients. Add peppers and onions. Toss with dressing. Chill.
I sometimes add pepperoni for a different flavor, or change the dressing to ranch or orange marinade dressing. A favorite for potlucks.
