I have made this a few times and it is nice and light in texture, and full of flavour. A favourite in our house. Angel.Quick Coconut Cake
Heat oven to 180° C. (350° F.) Grease and line a 23cm (9") cake tin.Ingredients~~ 2 cups self-raising flour 2 cups desiccated coconut (shredded) 250g/ 80zs butter -- melted 11/2 cups sugar 1 cup milk
Method~~ Melt butter in a large saucepan. Stir in the sugar and allow to cool slightly. Add all the other ingredients. Stir to mix. Pour into prepared cake tin. Bake in pre-heated oven for about 40 minutes.
