These are from the Cooking with Mickey & Friends cookbook for kids. It has like 30 recipes that my 6 year old loves to try.
Rafiki's Coconut Fruit Kabobs
8 oz. can chunk pineapple in juice 1 banana, peeled and cut 1" pieces 1 apple, cored and cut 1" pieces 1/4 c. orange juice 1/4 c. shredded coconut
Mix pineapple in juice with banana and apple. Add orange juice. Place fruit on skewers, alternating. Put half the coconut on a plate, add skewers, and top with remaining coconut. Gently press in the coconut. (Also try melons, grapes, berries, papaya, kiwi etc.)
Mufasa's Mouthwatering Chops
4 boneless pork chops, 1" thick 1 tsp. Italian seasoning 1/2 c. chicken broth 1 TBLS. lemon juice Topper (below)
Heat nonstick fry pan over medium-high heat for 1 minute. Cook chops for 2 minutes, turn, cook 2 minutes longer. Top with seasoning, broth and juice. Add topper onto chops. Cover and cook on low 2 minutes. (Toppers: Mild salsa and grated monterey jack cheese; drained pineapple slices and brown sugar; drained peach slices with honey; pizza sauce and mozzarella cheese; mashed potatoes and cheddar cheese). (serves 4)
Jasmine's Fruit Smoothie
1 banana, peeled 1 c. fresh strawberries, wash, hulled 1 c. nonfat plain yogurt or low-fat milk 1/4 tsp. vanilla (optional) 2 ice cubes
Blend ingredients until smooth. Serves 4
