Cajun Meatloaf
Ingredients:
2 Tbs. butter 1/2 bunch green onions, tops included, finely chopped 1/2 cup onion, finely chopped 1/2 cup bell pepper, finely chopped 1 tblsp. minced garlic 1 1/2 tsp. salt 1 tsp. cumin 1 tsp. oregano 1 tsp. black pepper 1/2 tsp. cayenne pepper 1/2 cup catsup 1/2 cup half-and-half or light cream 1 lb. ground beef 1 lb. ground pork 1/2 cup fine bread crumbs 2 eggs 3 tsp. Worcestershire sauce 2 tsp. Tabasco sauce
Directions:
Saute onions, bell pepper, and garlic in butter until crisp-tender. Set aside.
Mix ground beef, ground pork, salt, cumin, oregano, black pepper, cayenne pepper, catsup, half-and-half, bread crumbs, eggs, Worcestershire sauce, Tabasco sauce and sauteed onion mixture.
Spoon mixture into 9 x 5 inch loaf pan. Bake at 350 F for one hour, or until meat is cooked through. Carefully drain grease from loaf pan, and invert loaf onto a serving platter.
Makes 5 to 6 servings.
