COTTAGE PUDDING (Poor Man's Pudding)
1 3/4 cups sifted flour 2 tsp. baking powder 1/2 tsp. salt 1/4 cup shortening 3/4 cup sugar 1 large egg 3/4 cup milk 1 tsp. vanilla
Sift flour, baking powder and salt together. Add ingredients; beat with rotary beater until smooth. Pour in greased 9-inch square pan. Bake 25 to 30 minutes at 350° F. Cut into 3-inch squares; serve warm with hot vanilla, lemon or nutmeg sauce.
Vanilla, Lemon or Nutmeg Sauce: 1 cup sugar 2 Tbsp. cornstarch 2 cup boiling water 4 Tbsp. butter 2 tsp. vanilla or 2 Tbsp. lemon juice with 1 Tbsp. grated rind or 2 tsp. nutmeg
Combine sugar and cornstarch in a saucepan. Gradually add boiling water; boil 1 minute, stirring constantly. Stir in butter and desired flavoring. Keep hot until served.
