Dried Fruit Cordial
This is a good wintertime recipe. I like using dried peaches or apricots.
1 lb dried fruit (apricots, peaches, pears or prunes)
3 3/4 cups dry white wine
1 cup brandy
2 cups sugar
Place all ingredients in a large glass jar and stir until well-blended. Cover tightly. Let stand at room temperature for at least one week, stirring occasionally.
After one week, fruit should be soft. After three to four weeks, the cordial's fruit flavor reaches maximum intensity. After six weeks, the fruit should be removed. If giving the cordial as a gift before the six weeks is up, make a note on the tag to remove the fruit at that time.
The fruit can be served on ice cream or pound cake. The cordial will last indefinitely.
