I don't have exact amounts for the candy. I usually just boil a potato until well done, then mash with a fork. Use no seasoning, just the potato. Be sure there are no lumps. Add powdered sugar till stiff enough to roll out to about 1/8 inch. Spread with peanut butter and roll up jelly roll style. Wrap in plasttic wrap and chill. You may also use left over mashed potatoes but it will take fewer potatoes and more powered sugar as the potatoes are much thinner. I prefer not to have the salt and pepper, butter, etc in the potatoes when I make the candy. Hope you can follow this; if not,let me know.
