I have the Fall/Winter cookbooks from 96, 97, 98, and 99. The only one that mentions anything about Harvest Pumpkin... is in the 99 book. I also checked all of my other Pampered Chef cookbooks--no luck. Could it have been from the catalog? Anyway, here is a filling recipe for Frosty Pumpkin Gingerbread Flan from the 98 book:
1 pkg (3.4 oz) butterscotch instant pudding and pie filling 3/4 cup cold milk 1 can (15 oz) solid pack pumpkin 3 cups frozen whipped topping, thawed 1/2 cup pecans, chopped 1/2 teaspoon ground nutmeg\ 1/2 teaspoon cinnamon
Whisk pudding mix into milk. Whisk in pumpkin. fold in whipped topping. Sprinkle with pecans, cinnamon, and nutmeg. (I would think you could add the spices with the pumpkin and then fold in the pecans at the end with the whipped topping.)
