Here is a Curried Rice Salad which is really yummy. You will need to double the recipe a few times this recipe will make enough for 4-6.
4 oz (125g) uncooked long grain 1 tablespoon oil 1 small onion 1 teaspoon of curry powder 4-5 tablespoons of french dressing 1 apple chopped into slices or bite size pieces. 1 0z (30g) toasted almond flakes 2 teaspoon Mango chutney 2 tablespoons of sultanas
Boil rice as normal, cut up onion and cook in oil (leave it fairly raw) Add curry powder to onion and cool slightly. Work mango chutney into onion, add chopped apple and rice to the chutney mixture and the almonds and sultanas. Add french dressing and mix thoroughly and serve.
