Hi Janice; This recipe, while not a bundt cake, sound like it would be very good. It comes from the Claddagh Inn, in Hendersonville, NC Creme de Menthe Squares 1 cup 1/2 cup 4 1 16-ounce can 1 cup 1/2 teaspoon 1 teaspoon sugar butter or margarine eggs, beaten chocolate syrup all-purpose flour salt vanilla extract 2 cups 1/2 cup 3 tablespoons confectioner's sugar butter or margarine Creme de Menthe (green) 1 6-ounce package 6 tablespoons chocolate chips butter or margarine
Grease a 9 X 13 inch baking pan. In a large bowl combine the first set of ingredients, mixing together with an electric mixer. Pour the batter into the prepared pan. Bake in 350 degree oven for 30 minutes. Cool in pan.
In a medium bowl combine the confectioner's sugar, 1/2 cup butter, and the Creme de Menthe, mixing with an electric mixer until smooth. Spread over the cake and refrigerate to harden.
In a small saucepan combine the chocolate chips and 6 tablespoons of butter, stirring until melted. Spread over the mint layer and chill for 10 to 30 minutes. Cut into squares. This freezes well. Make 60 to 80 squares. Enjoy
