CREME de MENTHE BARS 1 cup sugar 1/2 cup butter or margarine 4 eggs, beaten 16 oz. can chocolate syrup 1 cup all purpose flour 1/2 tsp.salt 1 tsp. vanilla
2 cups confectioners sugar 1/2 cup butter or margarine 3 Tbsp. green Creme de Menthe
6 oz. package chocolate chips 6 Tbsp. butter or margarine Grease a 9 X 13 inch baking pan. In a large bowl combine the first set of ingredients, mixing together with an electric mixer. Pour the batter into the prepared pan. Bake in 350 degree oven for 30 minutes. Cool in pan.
In a medium bowl combine the confectioner's sugar, 1/2 cup butter, and the Creme de Menthe, mixing with an electric mixer until smooth. Spread over the cake and refrigerate to harden.
In a small saucepan combine the chocolate chips and 6 tablespoons of butter, stirring until melted. Spread over the mint layer and chill for 10 to 30 minutes. Cut into squares. This freezes well. Make 60 to 80 squares. Enjoy
