1 Qt pumpkin, cubed
Put the pumpkin in a pan and cover with water. Bring to a boil and cook 15-20 min. Drain, but save the liquid-approximately 1-1/2 Cups of liquid. Mix liquid with 1 Cup brown sugar. Pour over the pumpkin and boil for another 15 min. Let pumpkin stand overnight in syrup. The next day, boil the pumpkin pieces for another 5 minutes. Take them from the syrup and set them on a waxed paper lined tray. Let them dry for about 10 hrs then roll them in granulated sugar.
