I bought a dehydrator at a garage sale 3 years ago and Every year my wife and I make about one or two gallon jars of dried tomatoes. If you live in a sunny place you can put non aluminum cookie sheets in the dash of your car and it takes about two days of good sun per sheet. Slice the tomatoes into 4-5 slices (tennis ball or larger toms)and lay them out touching each other. Or throw them in a heavy skillet and make a sauce (thin or thick- depending on time) I never bother with tedious stuff like de-skinning or de-seeding.
