This made my mouth water! This is something I am going to try for breakfast this weekend.
6 bacon strips 6 cups frozen cubed hash browns 3/4 c. chopped green pepper 1/2 cup chopped onion 1 tsp. salt 1/4 tsp. pepper 6 eggs 1/2 c. shredded cheddar cheese
In a large skillet over a medium heat, cook bacon until crisp. Remove, crumble and set aside. Drain grease, reserving 2 tbsps of drippings. Add hash browns, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. Cook and cover, stirring occasionally, until hash browns are browned and tender, about 15 minutes. Make six wells in the hash brown mixture; break one egg into each well. Cover and cook on low heat for 8-10 minutes or until eggs are completely set. Sprinkle with cheese and bacon. Serves 6. YUM!
