Jackie, here is a recipe I haven't made yet but plan on making soon. Sounds just different enough that your daughter might be interested.
Apple Lasagna
8 oz. shredded chedder cheese 1 cup ricotta cheese 1 egg, beaten 1/4 cup sugar 1 teaspoon almond extract 2 20 oz. cans apple pie filling 8 lasagna noodles, cooked and drained 6 tablespoons flour 6 tablespoons packed brown sugar 1/4 cup quick oats 1/2 teaspoon cinnamon dash nutmeg 3 tablespoons butter 1 cup sour cream 1/3 cup brown sugar
Heat oven to 350°. Grease 9"x13" pan. Combine cheeses, egg, sugar and almond extract, blend well. Spread 1 can of apple pie filling over bottom of pan. Layer half of noodles over filling, spread cheese mixture over noodles. Top with remaining noodles, then remaining can of apple pie filling. Combine flour, brown sugar, oats, cinnamon and nutmeg, cut in butter until crumbly. Spinkle over pie filling. Bake 45 minutes, cool 15 minutes. While lasagna is baking, blend cour cream and brown sugar, cover and chill. Serve squares of warm lasagna with sour cream topping.
