Baked Salmon with Tomatoes
Salmon fillet 1 quart canned tomatoes 3 large sweet onions, sliced 1 lemon
Lay salmon fillet in large baking dish or roasting pan. Roll lemon on counter to soften it, slit ends and squeeze lemon juice onto salmon as desired. Cover salmon with layers of sliced onions. Add tomatoes covering salmon and onions. Sliced celery or parsley bits can be added for a change in flavor.
If desired, prepare potatoes for baking and add to oven to cook at the same time.
Bake in 350 degree oven for one hour.
Garnish salmon with parsley and serve hot in dish with juices and tomatoes smothering the salmon. I usually serve it with baked potatoes (complete with the trimmings) and peas or asparagus.
This is a delicious meal which can be prepared for baking several hours ahead and stored in the refrigerator.
I have a vacu-sealer and also prepare the salmon ready to bake, vacu-seal it and store in the freezer so I always have a lovely, salmon dinner in the freezer to cook for upexpected company. When frozen, thaw in the micro-wave and then bake as usual. Already baked, it also holds up well in the freezer when vacu-sealed.
