BUBBLE and SQUEAK
You will need.........

Some cooked potatoes.
Some cooked runner beans or cabbage.
Slices of back bacon. [or Gammon, Ham, or Corned Beef.]
Grated, or finely chopped onion.
Lump of butter.
Salt and pepper to taste.
Mixed herbs, to taste.
Fried egg.

The amounts needed will vary according to taste
and how many you are cooking for. Experiment!!!

Cut the bacon into little squares.
Grate or finely chop the onion.
Fry in the butter, in a shallow pan, or a wok.
Meanwhile, mix the cooked potatoes and runner beans in a bowl
and chop them with a sharp knfe.
Add all the seasonings to taste. Mix well.
Add this to the frying pan [or wok] and
stir-fry on a hot flame, blending in with the bacon
and onions. Cook until brown crispy bits appear.
Serve with the fried egg on top!!

BUBBLE AND SQUEAK

1 pound cold potatoes
2 ounces dripping or lard
1 onion, finely chopped
8 ounces cooked cabbage or sprouts, chopped
Salt
Black pepper, freshly ground

Finely chop the potatoes and crush slightly. In a frying pan melt half the fat and lightly fry the onion. Mix in the potato and greens and season well. Add
more dripping or lard. Press the

bubble into the hot fat and fry over a moderate heat until browned underneath. Turn the bubble over, add the last of the fat and fry until the other side is
browned. Bubble and Squeak

Here is a version of one of my favorite dishes from the UK. It is very high in vitamins and fiber. I not only love the taste but I love the
name. 1 head Cabbage (savoy or regular) - cored and sliced thinly
1 large Onion - sliced thinly
2 slices Turkey Bacon - cut in large dice
1/8 cup de-fatted Chicken or Vegetable Stock
Season Salt and Pepper - to taste
1 tsp. sugar
Spray Oil

In a large skillet heat oil and add turkey bacon on medium-high heat. When the bacon begins to brown add onions and sauté a minute
or two. Add cabbage, seasonings, sugar and stock. Mix well. Lower heat to medium and cook with top on for 5 minutes. Stir and allow
to cook another 7 to 10 minutes, uncovered, or until the cabbage is tender. Listen while it cooks, it should bubble and sometimes
squeak; hence the name.Bubble and Squeak

Ingredients:

3 unpeeled potatoes, boiled
4 cups cabbage (or other similar greens), chopped
1/2 yellow onion, chopped
freshly ground black or white pepper to taste

Directions:

Serves: 4-6.

Preparation time: 20 mins.

Mash the potatoes. Add the greens and onion. Mix together and form into patties by hand. Fry over medium-low heat until golden brown on the
bottom (1/2 hr) Invert onto a plate and serve with optional salt. Delicious with a beer and a green salad. Patties can be frozen and cooked at your
convenience.
