Ingredients
3/4 cup sugar

1/4 cup corn starch

14 tsp. salt

12 oz. milk

2 eggs well beaten

1 1/4 tsp. grated lime peel

2 1/2 oz. fresh lime juice

1 Tbls. butter

Baked 9 inch pie shell Directions
Combine sugar cornstarch and salt in a medium saucepan. Mix well and gradually pour in milk. Cook over mdeium heat, stirring constantly, until mixture comes to a boil and thickens. Blend a small amount of the hot mixtue into the eggs and then add them to the saucepan. Continue to cook over low heat for 2 minutes, stirring constantly. Remove from heat and stir in grated peel, lime juice and butter. Pour mixture into baked pie shell and chill.
