My favorite of all time- had this recipe for years (in the paper in 1978) but have never made-should be good though as James Beard should know his stuff..

You will need the cane or metal tubes to bak the cannolis- 5 in long and 1 in wide. Can be purchased in hardware shops..??

To make pastry-
Sift together 1-1/4 c flour, 1 tsp powdered cocoa, 1/2 tsp instant coffee powder, 1/8 tsp salt and 1 tbls sugar.

Cut into mixture 1 tbls butter which has been cut into small pieces and is at room temp.Mix till resembles fine bread crumbs. Measure 1to 2 tbls sweet wine such as Marsala, or sherry and moisten the dry ingredients. Add more wine if necessary to make a medium soft to hard dough. Wrap in plastic and chill one hour.

Filling-

Put in bowl 1 cup ricotta cheese (strained if lumpy) and stir in 2/3 cups superfine sugar, 1 tbls orange flower water or sweet liquueur ( ie amaretto) Mix well. Add 1/4 cup orange and citrus peel cut fine (optional) and 2 oz sweet chocolate chopped fine. Divide mixture in two and mix 1 tbls cocoa into one. Cover and refrigerate.

Roll dough between sheets of waxed paper to 1/8 in thickness. With cutter- cut rounds about 3-1/2 in diameter. Slightly roll between wax paper sheets to make oval shape. Place 1 oiled cannoli tube lengthwise on each piece of dough. With your finger ease the dough around the tube. (You can use a bit of olive oil if you need to) Coat edges with beaten egg white. Fold dough over tube pressing it down in the middle. With your two fingers With your fingers- enlarge the two ends to open them up- it should look like a tube overlapping in the middle and opening up at the ends.

Heat a large amount of olive oil in a deep heavy saucepan to 375 degrees. Should be enough oil to submerge 2 cannoli at a time. Slide the cannoli tubes into the oil and fry till dark golden brown. Carefully remove with a slotted spoon and drain on paper towel. Cool to lukewarm - and carefully slide the cannoli off the tubes. Cool completely.
Fill each tube with about 1-1/2 tsp of vanilla filling at one end and chocolate at other. Sprinkle with confectioners sugar and serve as soon as possible.
