Pineapple Cheesecake with Haupia Sauce (Coconut
Sauce) from Mark Okumura, executive pastry chef at Alan Wong's Hawaii Regional Cuisine Marketplace, in Honolulu, as well as the Pineapple Room, gives cheesecake a triple tropical twist with pineapple, coconut (baupia), and macadamia nuts.
