This is a light summer favorite at our house.
Frozen Butter Mint Salad
1 tall can crushed pineapple, undrained 1 small package lime jello 10 oz. pkg. miniature marshmallows 1 1/2 c. cream, whipped OR an 8 oz. bowl Cool Whip 1 7 oz. pkg Butter Mints, chopped coarsely
Mix first three ingredients in large bowl. Cover and let stand overnight in the refrigerator. Whip cream and mix along chopped mints into the pineapple mixture. Place in a 9x13 pan and freeze. Cut into squares to serve. Makes 12-15 servings.
