Recipe makes 2 pies - it's a sin to make just one!
Texas Cream Pie
Mix 1 1/2t.flour into 1/2c. sugar. Separate 4 eggs and beat egg yolks together and add yolks to flour mixture. Slowly stir in 2 cups milk and a pinch of salt. Cook over low heat, stir constantly until it bubbles. Remove from heat. Add 1 pkg. plain gelatin that has been dissolved in 1/4 cup water. Stir mixture and chill in refrigerator 1 hour.
Add 1/4 t. cream of tartar to 4 egg whites, beat stiff, gradually adding 1/2c. sugar and 1t. vanilla.
Fold into cold custard. Pour equally into two baked deep dish pie shells. Top with firm whip cream or Cool Whip. Grate a fine layer of semi-sweet chocolate over the top. The vanilla cream is the favorite but the cream filling can be lightly flavored with melted chocolate if desired, but not heavily done.
Keep refrigerated. Gets raves from guests. This recipe was famous in some West Texas restaurants and customers would buy whole pies to take home.
