Purchase bread dough (3 loaves to a package)from your supermarket freezer. Thaw one day in refrigerator until it starts to rise. Remove to bowl and let rise in warm place until double in bulk. (I start Thursday evening for a Saturday Night party!) Optional: Punch down and blend in One Tablespoon Olive Oil, 1/4 tsp. salt and 1/2 teaspoon Italian Herbs...let double again. Stretch and roll out in 10" rounds, 1/4" thick (doesn't have to be perfect!!). Brush rounds on one side with olive oil and place oil side down onto rack of a pre-heated gas grill or low-temperature charcoal fire (if you have not used the option of flavoring dough, then lightly salt the pizza rounds). Grill on the one side only for two minutes or until pizza is nearly cooked through with grill marks, but not burnt. Remove and layer with waxed or parchment paper. Repeat until all are finished. (Can be prepared ahead.) Have ready sauteed ripe tomato slices, roasted yellow peppers, sauteed onions, mushrooms, green peppers, cooked Italian sausage or sliced meatballs, sauteed eggplant, sliced proscuitto, shredded mozzarella cheese mixture and all other favorite toppings. Since cooking is minimal in time, all toppings should be already cooked and just need to be heated through. When ready, brush oil on uncooked side of dough and place grilled side up onto a waxed paper plate. Put out all ingredients and let everyone make their own, starting with cheese first. Put toppings on the grilled side on top of the cheese, then slide off of plate onto char grill for 2 - 3 minutes. My favorite: Cheese, Sauteed Eggplant, sliced ripe tomatoes, Proscuitto, roasted yellow peppers, sauteed red onions! Well worth the effort!!!
