For those with an abundance of squash, try this! Cindi’s Squash CasseroleCasserole Ingredients:
1 lb. zucchini or yellow squash 1/2 C. water 1/4 c. mayonnaise 1 egg, beaten 1/2 c. shredded cheddar cheese 2 T. butter 1 1/2 tsp. sugar 1/4 c. minced onion or 1 T. dehydrated onion Topping Ingredients: 2 T. butter melted 1/4 c. cracker crumbs (any variety or croutons!)
Thinly slice squash into 1 1/2 quart glass casserole, add onion and water. Cover and microwave on high about 10 minutes. Stir after 10 minutes. Drain and place in an 8x8 glass casserole dish. Add 2 T butter and allow to melt. Meanwhile. Mix mayonnaise, egg, cheese and sugar together. Pour over squash mixing well. Microwave at Low for 3 minutes. Stir. Microwave on Low for 2 more minutes. Stir. Sprinkle top with cracker crumbs that were mixed with melted butter. Microwave for 2 to 4 minutes until the center is set. Let stand for 5 minutes before serving.
4 servings. This recipe can be doubled in a 13x9 pan.
