Pampered Chef Florentine Artichoke Dip
1 (10 oz.) pkg spinach, thawed & squeezed dry 1 (14 oz.) can artichoke hearts, drained & chopped 3 cloves garlic, minced 1/2 cup mayo 2 (8 oz.) pkgs cream cheese, softened 2 Tbsp. lemon juice 1 cup grated parmesan
Preheat the oven to 375. Lightly grease a 7 x 11" baking dish (I actually use my PC round shallow stone casserole dish). In a medium bowl, mix together cream cheese and mayo until smooth. Mix in the artichoke hearts, spinach and cheese. Season w/ garlic & lemon juice.
Spread evenly into prepared baking dish. Bake covered for 20 min. then remove cover and let bake for 5 more min. or until surface is lightly browned.
I serve this w/ pita wedges. YUM!
